Date Snickers

Ingredients:

10 Medjool dates

2 tablespoons peanut butter

¼ cup chopped or crushed peanuts

½ cup dairy-free dark chocolate chunks or chocolate chips

Notes:

If you have a peanut allergy, any nut butter and nut will work as a replacement!

Sweet Potato Jack-O-Lanterns

Ingredients:

medium sweet potatoes

olive oil (or your cooking oil, avocado, grapeseed, etc.) sea salt

Witch Guacamole Dip

Ingredients:

  • ripe avocados halved and pitted
  • 3 tablespoons lime juice
  • 1/2 teaspoon salt
  • 8-ounce vegan flavored cream cheese
  • 1/3 cup salsa verde
  • 2 green onions, chopped
  • tablespoons chopped fresh cilantro
  • to 4 carrots, peeled and cut into sticks
  • 1/2 a bag of blue tortilla chips
  • small sweet pickle
  • 2 sliced green bell pepper, 2 sliced yellow bell pepper, 1 sliced red bell pepper
  • 1 canned black olive
  • 1 green pea

Roasted Pumpkin Seeds

Ingredients:

  • Medium-sized pumpkin
  • 1 cup raw pumpkin seeds, rinsed and dried on a clean kitchen towel
  • (4 oz) 1 tablespoon extra-virgin olive oil
  • 1 teaspoon Diamond Crystal kosher salt or ½ teaspoon fine salt (optional)
  • 1 teaspoon smoked paprika or chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (up to ½ teaspoon if you like your food spicy)
