DC Caviar (3-bean salad)
Adapted from Forks over Knives Cookbook
1 15 oz. can of chili beans, rinsed and drained
1⁄2 red, yellow or orange bell peppers, diced small 1⁄4 cup red onion, diced small
2 Tablespoons fresh parsley, diced small
1⁄4 cup Balsamic vinegar (to taste)
Salt and freshly ground black pepper (to taste)
1. Combine all ingredients in a large bowl and mix well.
2. Serve cold or room temperature.
Makes 4 Servings
Jicama Sticks
1 large jicama, cut into 1⁄4” sticks or pre-cut jicama
1 lime, juiced
1⁄2 teaspoon cayenne pepper
1. Combine all ingredients in a large bowl and mix well.
2. Perfect served chilled for a tangy, summer snack.
Makes 4 Servings
